Finely grate the ginger and garlic.
Heat the olive oil in a saucepan over medium heat. Sauté the ginger and garlic until fragrant.
Add the ground mitmita and stir well to combine.
Pour in the water and vinegar. Add a pinch of salt and brown sugar. Mix well.
Simmer the sauce over medium heat for 5-7 minutes, or until slightly thickened.
Let it cool, and serve with grilled meats, vegetables, or injera bread.
