In a bowl, combine the ground beef with salt and black pepper. Form the mixture into 4 equal-sized patties.
Cook the bacon in a dry skillet until crispy. Set aside.
Slice the red onion into rings and sauté them in the same skillet with a little butter until softened and slightly caramelized.
In a hot skillet or on a grill, cook the patties for 3-4 minutes per side.
After flipping the patties, place a slice of cheddar cheese on each one. Cover the skillet to allow the cheese to melt.
Halve the hamburger buns and spread butter on the cut sides. Toast them in a skillet until golden brown.
Spread mayonnaise and mustard on the bottom half of each bun, then add a lettuce leaf.
Place the cheesy patty on top of the lettuce, then pile on the crispy bacon, sautéed onions, tomato and pickle slices, and jalapeño pepper.
Spread BBQ sauce and ketchup on the top half of each bun, then place it on the burger.
Serve immediately with French fries or coleslaw.
