In a large bowl, whisk together all the flours and salt.
In a smaller bowl, dissolve the yeast in lukewarm water and add the honey. Let it stand for 10 minutes, until frothy.
Pour the yeast mixture into the flour mixture, then add the olive oil and begin to knead the dough.
Knead the dough for 10-12 minutes until it is elastic and smooth. If it's too dry, add a little water.
Cover the dough and let it rise in a warm place for about 1 hour, or until doubled in size.
On a lightly floured surface, shape the dough into a loaf and place it in a loaf pan lined with parchment paper.
Cover and let rise again for 30 minutes. Meanwhile, preheat the oven to 350°F (180°C).
Bake the bread for 40-45 minutes, until golden brown and the bottom sounds hollow when tapped.
Let it cool completely on a wire rack, then slice and serve!
