Place the chickpeas, red onion, garlic, parsley, and cilantro in a food processor. Add the cumin and process until you have a smooth mixture.
Add the flour and mix until the mixture is firm enough to form patties.
Form small patties and fry them in hot olive oil until golden brown on both sides.
Toast the inside of the burger buns until crispy.
Slice the tomatoes and cucumber thinly, and prepare the iceberg lettuce.
Assemble the burger: place the lettuce on the bottom half of the bun, add the falafel patty, layer with tomato and cucumber slices, then drizzle with tahini sauce. Top with the upper half of the bun.
