Warm the milk slightly, then stir in the sugar and crumble in the yeast. Let it proof.
Sift the flour into a large bowl, add the salt, egg yolks, melted butter, and the proofed yeast.
Knead the dough until it is smooth and elastic. Cover and let rise in a warm place for about 1 hour.
Roll out the dough to about 1 cm thickness, then cut out donut shapes using a glass or a donut cutter.
Heat the oil and fry the donuts over medium heat until golden brown on both sides.
Remove the donuts with a slotted spoon and place them on paper towels to drain excess oil.
Serve sprinkled with powdered sugar and with apricot jam on the side.
