500 g All-purpose flour
150 g Butter
200 g Feta cheese
150 g Sour cream
1 Egg
25 g Fresh yeast
100 ml Lukewarm milk
1 tsp Salt
1 tsp Sugar
1 Egg, for egg wash
50 g Grated feta cheese, for topping

    Preparation Steps

    Activate the yeast: in the lukewarm milk, stir in the sugar and the yeast, then let it sit for 10 minutes until foamy.

    In a large bowl, combine the flour and salt, then rub in the butter until the mixture resembles coarse crumbs.

    Crumble the feta cheese into the mixture and combine well.

    Add the sour cream, egg, and activated yeast, then knead the dough thoroughly until it comes together.

    On a lightly floured surface, roll out the dough to about ¾ inch (2 cm) thickness, then fold it three times to create layers.

    Roll out the dough again to about ¾ inch (2 cm) thickness, then use a scone cutter to cut out the shapes.
