Whisk the egg yolks with the flour, salt, and a pinch of sugar until smooth.
Heat the milk in a saucepan over medium heat until lukewarm. Then, gradually whisk it into the egg yolk mixture.
Stir the grated feta cheese into the milky egg yolk mixture.
Whisk the egg whites until stiff peaks form. Gently fold the beaten egg whites into the cheese mixture.
Butter a soufflé dish, then pour the cheese mixture into it.
Bake in a preheated oven at 350°F (180°C) for 20-25 minutes, or until the soufflé has puffed up and turned golden brown.
Once done, let it cool slightly before serving warm.
