200 ml Heavy Cream
200 ml Milk
50 g Sugar
3 Egg Yolks
4 Fresh Figs
3 tbsp Honey
1 packet Vanilla Sugar

    Prepare all the ingredients. Pour the milk and heavy cream into a saucepan and heat over medium heat. Do not boil, just warm through.

    In a bowl, whisk the egg yolks with the sugar and vanilla sugar until pale and fluffy. Gradually add the warm milk and cream mixture, whisking constantly. Then, pour the mixture back into the saucepan.

    Cook the mixture over low heat, stirring constantly, for 5-7 minutes, or until it thickens slightly. Be careful not to let it boil.

    Chop the fresh figs into small pieces and add them to the egg mixture. Add the honey to enhance the sweetness and allow the flavors of the figs to meld.

    Once well combined, strain the mixture through a fine-mesh sieve to remove the fig pieces. Pour the strained mixture into a bowl and let it cool to room temperature.
