Roughly chop the walnuts, then lightly toast them in a dry skillet over medium heat for 2-3 minutes. This enhances their flavor and provides a crispier texture in the filling.
Steam the bao buns: place them in a bamboo or metal steamer lined with parchment paper, over boiling water. Steam for 5-6 minutes, or until completely soft and fluffy. Tip: Do not lift the lid during steaming to avoid interrupting the process.
Once the bao buns are cooked, carefully open them without cutting all the way through. Spoon approximately 1 tbsp of fig jam into each, then sprinkle evenly with the toasted walnuts.
Serve fresh while the bao buns are warm, so the jam remains creamy and spreads nicely. Tip: If using a thicker jam, you can thin it with a little warm water or lemon juice before serving.
