Finely chop the pistachios. Grate or finely mince the onion and garlic.
In a large bowl, combine the ground lamb, pistachios, onion, garlic, ground paprika, black pepper, salt, and ground cumin.
Mix everything thoroughly. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Shape the meat mixture onto skewers. Grill over medium heat on a lightly oiled grill rack or in a grill pan for 8-10 minutes, turning occasionally, until evenly browned on all sides.
Remove the kebab from the heat and sprinkle with fresh parsley.
Serve with yogurt sauce, fresh salad, and grilled vegetables.
