Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
In a saucepan, melt the butter, honey (or golden syrup), and brown sugar over low heat until smooth and well combined.
Remove from heat and stir in the vanilla extract and salt.
In a large bowl, combine the rolled oats, dried fruits, and nuts (if using).
Pour the melted butter mixture over the dry ingredients and mix thoroughly until all the oats are well coated.
Pour the mixture into the prepared baking tray, then use a spatula to press it down evenly.
Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
Remove from the oven and let it cool completely before cutting into slices.
Serve for breakfast or as a snack, on its own or with yogurt.
