In a large bowl, whisk together the flour and salt. Gradually add the milk, whisking constantly until you have a smooth batter.
Add the eggs to the batter and whisk thoroughly until well combined. Let the batter rest for 15 minutes.
Dice the smoked bacon into small cubes. Fry the bacon in a skillet until crispy. Set aside to cool slightly.
Preheat the oven to 400°F (200°C). Grease a baking sheet with butter or oil, then sprinkle the bacon cubes evenly across the bottom.
Pour the batter over the bacon in the baking sheet and transfer it to the preheated oven.
Bake for 30-35 minutes, or until the Fläskpannkaka is golden brown and the edges are slightly puffed up.
Serve hot, traditionally with lingonberry jam and a fresh side salad.
