Cut the bacon into thin slices. Fry in a skillet over medium heat until crispy. Once done, set aside on a plate.
Add a knob of butter to the rendered bacon fat in the skillet for extra richness.
Crack the eggs and carefully pour them into the skillet. Season with salt and pepper, and cook to your desired doneness (sunny-side up or with a runny yolk).
To serve, place the fried eggs on a plate and arrange the crispy bacon next to them. Sprinkle with freshly chopped parsley.
