Slice the smoked sausage into smaller pieces or rounds. Heat a skillet over medium heat.
Add the sausage to the skillet and cook for 5-7 minutes, until nicely browned and crispy. Turn occasionally to ensure even cooking on all sides.
Transfer the sausage to a plate and set aside, but leave a little rendered fat in the skillet for cooking the fried eggs.
Crack an egg into a small bowl, then carefully slide it into the skillet. Repeat with the remaining eggs. Season with salt and pepper to taste.
Cook the eggs until the whites are completely set, but the yolks are still runny. This should take about 3-4 minutes over medium heat.
Serve the fried sausage with the fried eggs alongside fresh bread or toasted baguette slices. Garnish with finely chopped parsley before serving.
