Fruit Rice Pudding is a true homemade dessert, perfect for a light yet satisfying meal. The rice is cooked in milk, then fresh or dried fruits are added and sweetened with sugar. The natural sweetness of the fruits and the creaminess of the milk harmonize to create a truly delicious dessert. The special thing about fruit rice pudding is that, although it is basically a sweet, the rice gives it a fullness that can be the perfect end to any meal.
This delicious dessert can be easily varied, as any fruit can be added, whether it's apples, peaches or cherries. In addition to fresh fruits, raisins or cinnamon can also contribute to enriching the flavors. Fruit rice pudding is therefore a simple yet extremely tasty choice!
Rinse the rice. In a saucepan, combine the rice with milk, sugar, vanilla sugar, and a pinch of salt. Bring to a simmer.
Add the grated lemon zest and cook over low heat until the rice is tender and most of the milk has been absorbed, stirring occasionally.
Once the rice is cooked, let it cool completely. Gently fold in the whipped heavy cream.
Clean and chop the fruits into bite-sized pieces. Carefully mix the fruits into the rice pudding.
Refrigerate for a few hours before serving to allow the flavors to meld.
