Peel the garlic cloves and grate the ginger.
In a medium saucepan, heat the olive oil over medium heat. Add the garlic and ginger and sauté for 2-3 minutes, until fragrant.
Pour in the red wine and cook for 5 minutes, allowing the alcohol to evaporate and the flavors to concentrate.
Add the coconut milk, brown sugar, and soy sauce, then stir well to combine.
Season with salt and pepper, then simmer over low heat for 10-15 minutes, or until the sauce has thickened to your desired consistency.
Once the sauce has reached the desired consistency, remove from the heat and let it cool slightly. Serve with roasted meats or grilled vegetables.
