Prepare the ingredients: peel and finely mince the garlic, roughly chop the dill, and juice the oranges to get fresh orange juice.
In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
Pour in the fresh orange juice, white wine vinegar, and honey. Stir well to combine, and bring the sauce to a simmer.
Once simmering, reduce the heat to low and cook for 10-15 minutes, or until the sauce has slightly thickened and the flavors have melded together.
Add the freshly chopped dill, salt, and pepper, then stir thoroughly. Cook for an additional 2-3 minutes to allow the dill flavor to infuse the sauce.
Taste and adjust the seasonings as needed. Add more honey for sweetness, or vinegar for a more acidic flavor.
Let the sauce cool slightly, then serve immediately with fish, chicken, or grilled vegetables. Store in an airtight container in the refrigerator for up to 3 days.
