In a separate small bowl, whisk together the cornstarch and water. Add this mixture to the sauce to thicken it.
Stir in the grated lime zest and chili flakes, then cook for another 2 minutes.
Season with salt and cook for another 1 minute to allow the flavors to meld.
Let it cool slightly, then serve with grilled meats, fish, or roasted vegetables.
