Rinse the quinoa thoroughly, then cook it in twice the amount of water for about 15 minutes. Once cooked, let it rest for 5 minutes, then fluff with a fork.
Cut the tofu into small cubes, then mix with soy sauce and a little sesame oil. Let it marinate for 10 minutes.
Heat the olive oil and sesame oil in a wok, then sauté the onion until translucent.
Add the sliced garlic and grated ginger, then sauté until fragrant, about 1-2 minutes.
Add the marinated tofu, then stir-fry for 5-7 minutes, until golden brown.
Stir in the cooked quinoa into the wok, and cook together for another 2-3 minutes to allow the flavors to meld.
Mix the tahini paste with a little soy sauce and a pinch of salt, then drizzle over the wok mixture.
When serving, sprinkle with black sesame seeds and fresh cilantro.
