Finely chop the onion. In a saucepan, melt the butter and sauté the onion until translucent.
Add the white wine and let the liquid reduce slightly.
Stir in the Dijon mustard, then pour in the heavy cream. Mix well.
Season the sauce with salt and pepper, then simmer over low heat for 5-10 minutes, or until thickened.
Serve with cooked or grilled meats, or use it to flavor roasted potatoes.
