Finely chop the onion. Heat the oil in a skillet over medium heat and sauté the onion until translucent.
Add the ground beef to the onion, mix well, and cook until the beef is nicely browned. Tip: Break up the meat with a fork or wooden spoon to prevent it from clumping.
Season the beef with taco seasoning, salt, and ground black pepper. Mix thoroughly and cook for another 5-6 minutes to allow the flavors to meld.
Meanwhile, wash and dice the tomatoes, and shred the lettuce.
Warm the tortilla wraps in a skillet or microwave for 15-20 seconds. This will make them pliable and prevent them from breaking when filling.
Place the tortilla wraps on a large plate and fill them evenly with the cooked beef, diced tomatoes, shredded lettuce, and grated cheddar cheese.
Finally, dollop with sour cream, fold in half or roll up carefully, making sure the filling doesn't fall out.
Serve freshly prepared, garnished with fresh vegetables or extra sour cream, if desired. Tip: If you like it spicy, add chili sauce or jalapeño peppers!
