Peel and finely grate the ginger.
Slice the orange into thin rounds for garnish.
In a large pitcher, pour the freshly squeezed apple juice, then add the grated ginger and honey.
Add the cinnamon stick and a pinch of nutmeg, then mix well.
Refrigerate for 30 minutes to allow the flavors to meld.
Before serving, add the ice cubes and top with sparkling mineral water.
Garnish with orange slices and a sprinkle of extra cinnamon, if desired. Serve immediately.
