Grate the ginger and place it in a large pot.
Add the sugar and one liter of water. Bring to a boil, stirring until the sugar is completely dissolved.
Let the mixture cool until lukewarm, then add the fresh lemon juice and yeast.
Pour the mixture into a clean bottle and top with the remaining half liter of water.
Seal the bottle and let it sit at room temperature for 1-2 days, until it becomes slightly carbonated.
Strain the ginger beer and store it in the refrigerator.
Serve in glasses filled with ice and garnish with fresh lemon slices.
