Peel the carrots and ginger. Thinly slice the carrots into rounds and grate the ginger.
In a medium saucepan, heat the olive oil over medium heat. Add the carrots and grated ginger. Sauté for 5-7 minutes, or until the carrots have softened slightly.
Pour in the orange juice, soy sauce, honey, and water. Stir to combine, then reduce heat to low and simmer for 10-12 minutes, allowing the flavors to meld.
Let the mixture cool slightly, then use an immersion blender to purée until smooth. If needed, add a little more water to reach your desired consistency.
Season the sauce with salt and pepper, stirring well to combine. Serve warm.
This sauce is excellent served with grilled meats, fish, or even tossed with pasta.
