Bring 1 liter of water to a boil in a saucepan, then remove from the heat.
Peel the fresh ginger and slice it into thin rounds. Add it to the hot water and let it steep for 10-15 minutes.
Strain the ginger-infused water through a fine-mesh sieve to remove the ginger pieces.
Add the lemon juice and honey, then stir well until the honey is completely dissolved.
Serve the hot drink in mugs, garnishing each with a lemon slice.
