Sift the flour into a large bowl, add a pinch of salt, and make a well in the center. Crack in the eggs and slowly combine to form a dough. Add a little water as needed to make it pliable.
Knead the dough for at least 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.
Prepare the filling: mix the mascarpone cheese, powdered sugar, honey, gingerbread spice mix, and ground walnuts. Finely chop the dark chocolate and stir it into the mixture until evenly combined.
Roll out the dough thinly. Evenly spoon small amounts of the filling onto one half of the dough, spacing them apart.
Fold the other half of the dough over the filling. Use a ravioli cutter or knife to cut out the ravioli. Press the edges firmly to seal and prevent the filling from leaking out during cooking.
Bring a large pot of water to a boil and lightly salt it. Drop in the ravioli and cook for 3-4 minutes, or until they float to the surface.
Drain the ravioli. In a skillet, melt the butter and gently toss the ravioli in it to lightly caramelize.
Serve sprinkled with ground walnuts and grated chocolate. Enjoy warm!
