15 g Yeast
10 g Sugar
10 g Salt
200 ml Milk
100 ml Water
2 tbsp Gingerbread spice mix
50 g Butter
30 g Sesame seeds

    Warm the water and milk until lukewarm. The liquid should be lukewarm to allow the yeast to activate properly. In a small bowl, dissolve the sugar and yeast in the lukewarm water, then let it rest for 5-10 minutes until foamy.

    Sift the flour into a large bowl, add the salt, and mix. Pour in the yeast mixture, then add the butter. Knead the dough well until it is smooth and elastic. If necessary, add a little more water to prevent it from becoming too dry.

    Cover the dough and let it rest in a warm place for 1 hour, or until it has doubled in size.

    Once the dough has risen, turn it out onto a work surface and divide it into 8-10 equal pieces. Roll each piece into a long rope, then shape them into pretzels.

    Place the pretzels on a baking sheet lined with parchment paper. Before putting them in the oven, brush them with a little water and sprinkle with sesame seeds.
