Pour in the lukewarm water and olive oil, and start kneading. Knead until you have a smooth, elastic dough, then cover and let it rise for 1 hour.
Chop the walnuts and toast them in a dry skillet for a few minutes to enhance their flavor.
Divide the risen dough into two equal parts and roll each out into a circle on a floured surface.
On one half of each dough circle, place the crumbled goat cheese, grated mozzarella, and toasted walnuts.
Drizzle with honey, then season with oregano, basil, and a pinch of black pepper.
Fold the other half of the dough over the filling, and press the edges together to seal, ensuring the filling doesn't leak out.
Brush the top with beaten egg, and poke a few holes with a fork to allow steam to escape during baking.
Bake in a preheated oven at 400°F (200°C) until golden brown, about 20 minutes.
