500 g All-purpose flour
150 g Butter
200 g Goat cheese
150 g Sour cream
1 Egg
25 g Fresh yeast
100 ml Lukewarm milk
1 tsp Salt
1 tsp Sugar
1 Egg for egg wash
50 g Grated goat cheese for topping

    Activate the yeast: In lukewarm milk, stir in the sugar and yeast, then let it stand for 10 minutes, until foamy.

    In a large bowl, combine the flour and salt, then rub in the butter until evenly distributed and the mixture resembles breadcrumbs.

    Grate the goat cheese, and mix half of it into the flour mixture.

    Add the sour cream, egg, and activated yeast, then knead the dough thoroughly until it comes together.

    On a lightly floured surface, roll out the dough to about ¾ inch (2 cm) thickness, then fold it in thirds three times to create flaky layers.

    Roll out the dough again to about ¾ inch (2 cm) thickness, then use a pogácsa cutter or round cookie cutter to cut out the shapes.

    Place the pogácsa on a baking sheet lined with parchment paper, and brush the tops with beaten egg.

    Sprinkle the tops with grated goat cheese, then bake in a preheated oven at 350°F (180°C) for 20-25 minutes, until golden brown.
