2 Onions
4 cloves Garlic
20 g Fresh ginger
4 Tomatoes
2 Bell Peppers
50 ml Vegetable oil
1 tsp Salt
1 tsp Black pepper
15 g Spices (turmeric, coriander, cumin)
500 ml Water
10 g Fresh coriander (for garnish)

    Prepare the ingredients: dice the goat meat, finely chop the onions, garlic, and ginger, and slice the tomatoes and bell peppers.

    Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Sear the goat meat until browned on all sides. Remove from the pot and set aside.

    In the same pot, sauté the onions until translucent. Add the garlic and ginger and cook for another 2-3 minutes, until fragrant.

    Add the sliced tomatoes and bell peppers. Cook for 5-7 minutes, or until the tomatoes have broken down into a sauce.

    Return the goat meat to the pot and pour in the water. Season with salt and pepper. Bring to a simmer, then reduce heat to low, cover, and cook for 1.5-2 hours, or until the goat meat is tender.
