80 g Sugar
1 Vanilla Bean
5 Gelatin Sheets
200 g Fresh Gooseberries
2 leaves Fresh Mint

    Soak the gelatin sheets in cold water until softened.

    In a medium saucepan, heat the heavy cream with the sugar and the seeds scraped from the vanilla bean. Bring to a gentle simmer to infuse the flavors.
