In a large bowl, combine the flour, dry yeast, sugar, and salt. Add the lukewarm water and melted butter, then knead until a dough forms.
Knead the dough by hand or with a mixer for 8-10 minutes, until smooth and elastic. Cover and let rise in a warm place for 1 hour.
Divide the risen dough into 8 equal pieces. Roll each piece into a long rope, then shape them into classic pretzels.
Bring 1 liter of water to a boil, remove from heat, and carefully stir in the baking soda (be careful, it will foam!).
Dip the pretzels one at a time into the baking soda water for 30 seconds, then place them on a baking sheet lined with parchment paper.
Crumble the gorgonzola over the top or middle of the pretzels. The cheese will melt slightly into the dough during baking, giving it a unique flavor.
Bake the pretzels in a preheated oven at 400°F (200°C) for 15-18 minutes, until golden brown and fragrant. Best served fresh and warm.
