Prepare all the ingredients. Grate the Gouda cheese, separate the eggs, and place the egg whites in a clean bowl.
In a separate bowl, whisk together the egg yolks with the flour, salt, and a pinch of sugar until smooth.
In a saucepan, warm the milk over medium heat until lukewarm. Gradually pour the warm milk into the egg yolk mixture, whisking constantly to prevent lumps.
Stir the grated Gouda cheese into the milk and egg yolk mixture.
In a separate clean bowl, whisk the egg whites until stiff peaks form. Gently fold the beaten egg whites into the cheese mixture in two additions, being careful not to deflate the mixture.
Grease a soufflé dish with butter, then pour the cheese mixture into the prepared dish.
Bake in a preheated oven at 350°F (180°C) for 20-25 minutes, or until the soufflé has risen and is golden brown.
Once baked, let it cool slightly before serving warm.
