250 ml Fresh Grapefruit Juice
300 ml Water
150 g Granulated Sugar
1 Grapefruit Zest
1 pinch Salt
5 Mint Leaves (optional)

    In a medium saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar is completely dissolved. This should take about 5 minutes.

    Zest the grapefruit and then juice it. Strain the juice to remove any seeds and pulp.

    Allow the sugar syrup to cool to room temperature, then stir in the grapefruit juice and zest.

    Every 30 minutes, scrape the sorbet with a fork to create an icy, crystalline texture. Repeat this process 3-4 times until completely frozen.
