Scrape the seeds from the vanilla bean and add them to the butter mixture.
Grate the green apple and squeeze out any excess juice. Stir the grated apple into the batter.
Add the egg and mix thoroughly.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Roll the dough into small balls, then flatten them slightly on the baking sheet.
Bake the cookies for 12-15 minutes, or until golden brown.
Let the cookies cool completely before serving or storing in an airtight container.
