Season the ground beef with salt and pepper. Form into 4 equally sized patties. Refrigerate for 20 minutes to help them hold their shape while grilling.
Preheat your grill to medium heat and lightly oil the grates to prevent the patties from sticking.
Grill the patties for 4-5 minutes per side, until nicely browned. During the last minute of grilling, place cheese slices on top to melt.
Halve the hamburger buns and grill the cut sides until lightly toasted.
Assemble the burgers: place a lettuce leaf on the bottom bun, top with the grilled patty and cheese, then add tomato slices, onion rings, ketchup and mustard to taste. Top with the other half of the bun.
Serve the burgers hot, with French fries or a fresh salad.
