Pat the springbok steaks dry with paper towels.
In a bowl, whisk together the olive oil, crushed garlic, finely chopped rosemary, salt, pepper, and lemon juice. Marinate the steaks in this mixture for 30 minutes.
Preheat a grill pan or outdoor grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
Grill the steaks for 3-4 minutes per side for medium-rare, or longer for your desired level of doneness.
Let the steaks rest for 5 minutes after grilling, allowing the juices to redistribute.
Serve the steaks with a fresh salad, roasted vegetables, or mashed potatoes.
