Cut the tofu into thick slices, and pat them dry with paper towels to remove excess moisture.
Prepare the marinade: whisk together the soy sauce, honey (or agave syrup), grated ginger, minced garlic, red pepper flakes, sesame oil, lime juice, salt, and pepper.
Place the tofu slices in the marinade and let them sit for 15-20 minutes, allowing the flavors to penetrate.
Heat a grill pan or griddle over medium-high heat. Grill the tofu slices for 3-4 minutes per side, until golden brown grill marks appear.
In a small saucepan, bring the remaining marinade to a simmer. Use it as a sauce to serve with the tofu.
When serving, sprinkle the grilled tofu with fresh cilantro and serve with the spicy sauce.
