Start by finely chopping the onions and garlic. In a large skillet, heat the oil over medium heat and sauté the onions until translucent.
Add the minced garlic and sauté for another 30 seconds, until fragrant. Then, stir in the Hungarian sweet paprika quickly to prevent it from burning.
Add the ground pork to the skillet and cook, breaking it up with a spoon, until browned. Season with salt and pepper to taste, then stir in the tomato paste.
Pour in the water and mix well. Simmer over medium heat for about 20-25 minutes, or until the meat is fully cooked and the sauce has thickened.
Meanwhile, cook the pasta: bring a large pot of salted water to a boil, then cook the pasta according to package directions until al dente. Drain and keep warm.
To serve, place the pasta on a plate, spoon the pörkölt over it, and top with a dollop of sour cream. Best enjoyed fresh!
