Heat the olive oil in a saucepan over medium heat. Sauté the minced onion and garlic until fragrant and translucent.
Add the minced habanero peppers and sauté for another 1-2 minutes.
Pour in the apple cider vinegar and water. Stir in the brown sugar and salt.
Simmer the sauce over low heat for 15-20 minutes, or until the peppers are softened and the flavors have melded.
Carefully blend the sauce until smooth using an immersion blender or a regular blender (use caution when blending hot liquids). Let cool completely, then transfer to sterilized bottles or jars.
Serve with grilled meats, tacos, or other Mexican dishes.
