Preheat your grill or skillet to medium heat. Season the beef patties with salt and pepper, and lightly brush with oil.
Cook the beef patties for 3-4 minutes per side, until cooked through and nicely seared. During the last minute of cooking, place a slice of cheddar cheese on each patty to melt.
Halve the hamburger buns and toast them on the grill or in a skillet until lightly golden and crisp.
Spread BBQ sauce on the bottom half of each bun, then layer with a lettuce leaf, a slice of tomato, and a slice of red onion.
Place the cheese-covered beef patty on top of the vegetables, then add mustard and ketchup to taste.
Top with the other half of the bun, and secure the burger with a toothpick if needed.
Serve the burger with fresh-cut fries or a side salad. Offer extra BBQ sauce on the side for dipping.
