Season the beef patties with salt and pepper on both sides. Preheat a skillet over medium heat and cook for 3-4 minutes per side, until a golden-brown crust forms.
When the patties are almost cooked through, place a slice of cheddar on each and cover the skillet to let the cheese melt.
Cook the bacon strips in a skillet until crispy. Drain on paper towels.
Toast the hamburger buns in a skillet or grill until the insides are golden brown and crispy.
Wash the lettuce leaves, and slice the tomato and red onion into thin rings.
Assemble the burgers: spread BBQ sauce on the bottom bun, then layer with lettuce, cheese-covered patty, crispy bacon, and tomato and onion slices.
Top with the other half of the bun, pressing down gently. Serve immediately with fries or coleslaw.
