Roughly chop the almonds or lightly crush them in a mortar and pestle. Toast them in a dry skillet over medium heat for 3-4 minutes, until fragrant. This enhances their flavor and gives them a pleasant, crunchy texture.
Place the bao buns in a bamboo or metal steamer lined with parchment paper, and steam them over boiling water for 5-6 minutes, or until completely softened. Avoid lifting the lid too often, as the steam will escape.
Once the bao buns are softened, carefully open them up, but do not cut them completely in half. Spoon in a portion of toasted almonds, then drizzle 1 tablespoon of honey into each bun.
Serve immediately, while fresh, when the honey is still slightly warm and spreads nicely over the almonds. Tip: For a richer flavor profile, consider using a slightly floral or chestnut honey.
