In another bowl, cream together the butter, sugar, and honey until light and fluffy. Then, add the egg and vanilla extract and mix well.
Gradually add the dry ingredients to the wet ingredients, kneading until a dough forms. If the dough is too sticky, chill it in the refrigerator for 30 minutes.
Roll the dough into small balls, flatten them slightly, and place them on a baking sheet lined with parchment paper. Leave space between them, as they will spread during baking.
Bake in a preheated oven at 350°F (180°C) for 10-12 minutes, or until golden brown. Let them cool on the baking sheet, as they will still be soft when hot.
