Combine the ground beef with salt and pepper. Form into 4 equal-sized patties. TIP: For better texture, chill the patties in the refrigerator for a few hours before cooking.
Heat a grill pan or skillet over medium-high heat. Brush with olive oil and cook the patties for 3-4 minutes per side, until golden brown and cooked through.
In a small bowl, whisk together the honey and chili sauce. During the last minute of cooking, brush the tops of the patties with the honey-chili mixture and let it caramelize.
Place the cheddar cheese slices on top of the patties and cover the pan to allow the cheese to melt.
Toast the cut sides of the hamburger buns in the grill pan or skillet.
Prepare the vegetables: slice the tomatoes and red onion, and wash the lettuce leaves.
Assemble the burgers: Place lettuce on the bottom bun, followed by the honey-chili patty, tomato slices, and red onion. Top with the other half of the bun.
Serve hot with french fries or a side salad. TIP: Serve any leftover honey-chili sauce as a dipping sauce.
