In a large bowl, whisk together the flour, salt, and cinnamon. Add the milk, eggs, and sparkling water, and whisk until the batter is smooth.
Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot surface for each pancake. Cook for 2-3 minutes per side, or until golden brown.
While the pancakes are still warm, drizzle them with honey and sprinkle with a little cinnamon. Fold in half or roll up.
Serve the pancakes with fresh fruit or whipped cream for an extra special treat.
