Pit and chop the plums into smaller pieces for easier cooking.
Finely chop the red onion and garlic. Grate the fresh ginger.
In a medium saucepan, heat the honey over medium heat. Add the red onion and garlic and sauté for 2-3 minutes, until softened.
Add the plums, grated ginger, apple cider vinegar, cinnamon, and ground cloves. Mix well to combine.
Simmer over low heat for 25-30 minutes, or until the plums are completely softened and the chutney has thickened.
Season with salt and pepper, then stir thoroughly. If desired, mash slightly with a fork for a creamier consistency.
Allow the chutney to cool completely, then pour it into a clean, airtight jar. Store in the refrigerator, where it will keep for up to a week.
