In a large bowl, whisk together the flour, baking powder, cinnamon, ginger, and salt.
Melt the butter, then whisk it together with the honey and sugar.
Add the egg to the wet ingredients and mix well.
Gradually mix the wet ingredients into the dry ingredients until a smooth dough forms.
Roll the dough into small balls and place them on the prepared baking sheet, spacing them apart.
Flatten the balls with the back of a spoon or your palm.
Bake the cookies for 10-12 minutes, or until golden brown.
Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
