Finely grate the garlic and the lime zest.

Stir in the curry powder and cook for 1 minute to bloom the spices.
Pour in the fresh lime juice and honey, then mix well.
Add the heavy cream and simmer over low heat for 3-4 minutes, or until the sauce has thickened slightly.
Season with salt and white pepper, and cook for another 2 minutes.
Finally, stir in the grated lime zest and let it rest for 5 minutes to allow the flavors to meld.
Serve over grilled fish, chicken breast, or steamed vegetables.
