Peel the garlic cloves and grate the ginger. Mince the garlic finely.
In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and grated ginger. Sauté for 2-3 minutes, or until fragrant.
Pour in the tequila and cook for 3-4 minutes, allowing most of the alcohol to evaporate.
Add the honey, soy sauce, lime juice, and chili flakes. Stir well to combine all the ingredients.
Season with salt and pepper. Reduce heat to low and simmer for 10-12 minutes, or until the sauce has thickened to your liking.
Once the sauce has reached the desired consistency, remove it from the heat and let it cool slightly. Serve with grilled meats, chicken, or vegetables.
